This is the first legal absinthe made in the U.S after the 2007 band was lifted. When it comes down to it, this is brandy that has been infused with their "whole trinity" of wormwood, star anise, and fennel. Then after the first infusion they added mint, tarragon, opal basil, lemon balm, hyssop, and stinging nettles. A very unique absinthe indeed!
Cocktail: Suisse (Dairy Free)
1.5oz St George Absinthe
0.5oz Creme de Menthe
0.25oz Fortaleza Blanco Tequila
0.75 Lemon Juice
0.5oz Almond milk Orgeat (See recipe below)
0.75oz Oat Milk
1 Mint Sprig
Egg White
Tonic Water
8 drops of Rose Flower Water
*Recipe for Almond Milk Orgeat: Equal parts almond milk and sugar, combine until all of the sugar is dissolved and refrigerate.
Combine all ingredients besides the Tonic water and dry shake until the eggs are frothy and integrated. Add ice to the tin and reshake until the egg whites are even more frothier and the cocktail is cold. Strain over crushed ice and top with more crushed ice. Top with tonic, Garnish with a bushel of mint and a straw!
